This recipe is super easy!
This is kind of a pick and choose recipe. As long as you have pumpkin in it it should turn out fine!
Heres what i put in mine tonight:
1 whole butter nut pumpkin
1/4 grey pumpkin
1 small sweet potato
2 small onions
2 carrots
2 potatoes
a few cloves of garlic
spices to taste
Step 1. Chop, chop, chop!
Before you get to the chopping the first thing you need to do is put a large pot on the stove half filled with water to boil.
Chop all the skin off the pumpkin
rougly chop into pieces.
add to pot.
peel an chop all the other veges and add to boiling water, also add garlic and spices at this stage
step 2. Boil, boil, boil!
Boil the veges until nice and soft
step 3. Blend, blend, blend!
Once the veges are nice and soft drain about 95% of the water from the pot.
Blend the veges a few cups at a time using a blender, mix master or blending wand until nice and smooth.
An hey presto! you have soup!
Serve hot with a dash of sour cream. Yum!
This can also be frozen for later use.
